Aged in 225L barrels for the red and 400L barrels for the white, exclusively in old casks. For the rosé: no oak aging, part aged in stoneware amphorae and part in stainless steel tanks.
These wines are more tannic than the Tradition cuvée, with greater complexity and length on the palate. They are better suited to aging.
